The classic cocktail known as the Kaikan Fizz, or "Milk Gin Fizz," is said to have been born at the prestigious "Tokyo Kaikan" in Marunouchi, Tokyo. Based on gin with lemon juice and milk added, topped with soda, it is a drink with a gentle and creamy texture.

This cocktail has an interesting anecdote: it was once created for a politician's secretary so that it "wouldn't look like they were drinking alcohol" to those around them. Because meticulous care is required when shaking to prevent the acidic lemon and milk from separating, it is also said to be a drink that makes bartenders weep.
